BAKE IT: Irish Soda Bread


My other half is Irish, very Irish. And he has an internal cookbook with the knowledge of a corned beef, roasted potatoes, and my favorite soda bread. His mother's recipe for soda bread bakes up like a cake, is slightly sweeter, and has a nice moist texture. It is amazing and by far the best soda bread I have ever tasted.

You will need:

2 eggs
4 cups flour
1 to 1 1/2 cups buttermilk
1 cup sugar
1 cup currents
3/4 cup butter
3 tsp bake powder
3 tsp bake soda
1 tsp salt

For top:
2 tbsp melted butter
1/2 cup sugar

Let us begin:

Preheat oven to 350. Lightly grease two 9" round pans.

In large bowl mix all dry ingredients.

Cut in butter.

Mix in eggs and buttermilk, stir until barely mixed.


Add in currents.

Pour on to floured board knead 5 times. It will be a very loose dough, think really thick cake batter.

Divide into 2 pieces, place into your cooking container and cut cross on top.


Bake for 45-60 minutes, test like a cake.

Brush with melted butter and sprinkle over sugar.
