Margarita Cupcakes











Margaritas, probably one of the most popular drink on the menu! And cupcakes have become the most popular dessert by far. So what happens when you cross the two? Heaven on a plate!

The subtle lime flavor, a hint of tequila, and a sweet frosting turn these into a crowd pleasing magical dessert!

This will make approximately 18 cupcakes
Full time: 1 hour 15 minutes (includes cool time, multiple batches, and frost time) 

The needs-

2 eggs
2 cups flour
1 1/4 cup sugar
3/4 cup milk
1/2 cup shortening, room temperature
1/4 cup lime juice
2 tbsp tequila (or sub 1 tbsp milk & 1 tbsp lime juice)
2 1/2 tsp baking powder
1/2 tsp salt
4 drops green food coloring

For frosting:
2 small or 1 large lime
2 cups plain white whipped frosting
2 tbsp lime juice


The know-

Preheat oven to 350.

In a large bowl cream together sugar and shortening.

Blend in eggs, salt, baking powder, and coloring.

Add in milk, lime juice, and tequila.

Add in flour.

Pour into lined cupcake pan and bake 18-20 minutes or until testing done.

Remove and allow to cool completely.

Let's get frosting ready-

Zest the out side of your lines and set aside.

Blend the juice of the limes and additional lime juice together, it will feel loose but don't worry if your cupcakes are completely cool you will not have any problems.

Pipe onto the top of the cupcakes.

Top with the lime zest.

Stick in a refrigerator for 20 minutes to let the frosting set.
