Looking for a quick and romantic dinner? Have a few guests you want to create a special meal for? Or just looking for the highlight meal of the week? Try this a classic like steak tips dressed up in a super simple but, robust flavored sauce.
Full time: 20 minutes
Serves 3-4
You will need:
2 lb. London broil or beef tenderloin, diced into 1" cubes
1 pint sliced mushrooms
1 cup heavy or whipping cream
4 tbsp plus 1 tsp butter
2 tbsp crumbled Gorgonzola
2 tbsp Parmesan cheese, grated
1 1/8 tsp ground black pepper divided
1 tsp salt
1/8 tsp ground nutmeg
Let us begin:
Preheat oven to oven to 450 degrees.
In a roasting pan place cubed beef tips. Season them liberally with 1 tsp salt and 1 tsp pepper.
Dice 4 tbsp butter into cubes and place in roasting pan with tips.
Place in oven and roast for 8-10 minutes, this will give you a medium rare, or 140 degrees. If you prefer a more cooked tip increase cooking time by 3-4 minutes.
Once cooked remove from oven and cover with aluminum foil, let sit.
To make sauce. In a medium saucepan melt 1 tsp butter over medium heat.
Add in mushroom and allow to brown, 5-8 minutes.
Once brown remove from saucepan to a bowl and set aside.
Add cream to pan and bring to boil, 4-5 minutes.
Once boiling add in Gorgonzola and Parmesan, stir to incorporate, 1-2 minutes.
Add in pepper, nutmeg, and return mushrooms to sauce pan.
Stir until sauce is creamy 2-3 minutes.
Plate tips and ladle over sauce. If desired you can serve over pasta, enjoy!
