Potatoes Florentine


I was asked about the green mashed potatoes, which I stated were "Potatoes Florentine" apparently more popular than the glazed pork as far as feedback and requests. So I bend to popular demand and post the potatoes just for you! Yes you! You know who you are! The fact that one of these requests came from a relative that I have not seen in twenty years is beside the point.

I am lucky to live in Oregon which is a very green state, both because it rains 354 days a year and because of environmental consciousness. YAY! Imposing the will of the few on the many! Recycle or die! Long live the revolution!

Speaking of green things, does anyone know what the Green Party actually stands for? I was online for hours trying to figure it out and still am clueless. Well maybe that is just the point?

Well here are some green potatoes. I particularly like these as a side dish when the main dish is white, such as chicken in a cream sauce, as they add a splash of color to the plate that plain mashed potatoes do not.

Ingredients for 6 peeps (or four extremely hungry peeps who don’t care about their carb intake):

6 Cups of hot mashed potatoes
1 Cup of hot cooked chopped spinach well drained
3 Tablespoons of butter
¼ Cup of parmesan cheese
½ Cup of milk or cream
Pinch of nutmeg
½ Teaspoon of salt
Pinch of pepper

How you do this? I tell you now:

Mix all together in a big mixing bowl. Using a wire whisk whip till well combined and the potatoes have a light green tint. Serve with darn near anything.
