English Brown Sugar Garlic Chicken

Okay, I know the words brown sugar and garlic next to each other many sound strange. But, once you get past the name, the dish itself is a delightful surprise. The nice roasted garlic melds with caramelized brown sugar to create a fabulous treat to eat!

Full time: 50-60 minutes
Serves 3-4

You will need:

5-6 chicken thighs, boneless/skinless substitute breasts if desired
2 garlic cloves, minced or 1 tsp minced garlic
1/3 cup packed brown sugar
1 tbsp olive oil
1 tbsp butter
1 tsp ground dry mustard
1/2 tsp salt
1/2 tsp ground black pepper

Let us begin:

Preheat oven to 350

In a cast iron pan or oven proof deep sauté pan, place butter and oil.

Heat pan on stove top over medium-high heat until butter is melted.

While this melts, season chicken with salt, pepper, and mustard. Make sure to do both sides of chicken.

Once butter is melted add garlic into the pan and cook for 5 minutes.

Add chicken to the pan and sear off for 5 minutes.

Flip chicken over and sear additional 5 minutes.

Once seared, carefully move pan into the oven and bake 20-25 minutes, or until chicken reads 140 on a thermometer.

Carefully slide pan out of oven and coat top I'd chicken with brown sugar.

Return to oven and cook 15-20 minutes more or until chicken had reached 180 on a thermometer.

Remove from oven to a serving platter and enjoy!
