Peanut Soup is a robust and distinct flavor soup. The hint is soy sauce combined with a slight bit of heat, creates visions of exotic East countries and spice markets.
Full time: 30 minutes
Serves 2-3
You will need:
1 stalk celery, diced fine
1/4 onion, diced fine
3 cup chicken stock
3/4 cup creamy peanut butter
2 tbsp butter
1 1/2 tbsp flour
1/2 tbsp soy sauce
1 tsp minced garlic
1/8 tsp crushed red pepper flakes
1/4-1/2 cup roasted peanuts for garnish
Let us begin:
In a medium sauce pot melt butter over medium-high heat.
Once melted add in onion, celery, garlic, and red pepper flakes.
Cook 5-8 minutes or until onion and celery become soft.
Sprinkle over flour and whisk vegetables around until well coated, approximately 1 minute.
Add in chicken stock while constantly whisking.
Stir in peanut butter and soy sauce.
Lower heat to medium-low and allow soup to simmer.
Whisk often to prevent scorching.
Serve immediately, topped with roasted peanuts and enjoy!
Goes great with herb seasoned crackers!
