BAKE IT: Banana Bread or Muffins

I love a good muffin and banana ones are by far the best! I live how the banana subtly moistens and sweetens the batter without losing any of it's natural flavor.

Banana bread is very simple to make and the batter easily divides into muffin tins with only a mild edit in cooking time. For the best result use bananas that have just begun to brown and are slightly mushy.

Full time: Muffins 35-45 minutes, Bread 1 hr 15 min to 1 1/2 hr
Makes 1 loaf bread, 6 large muffins, 12 small muffins

You will need:

3 slightly over ripe bananas
1 egg
1 1/2 cup flour
3/4 cup sugar
1/3 cup butter, melted
1 tsp vanilla extract
1 tsp baking soda
1/4 tsp salt

*optional: 1 cup small chopped nuts

Let us begin:

Preheat your oven to 350

Lightly grease a loaf pan or muffin pan. Or use muffin liners-set aside.

In a large bowl place bananas and mash them.
 
 
 

Mix in egg, vanilla, and melted butter.

Mix in sugar, salt, and baking soda.

Mix in flour and stir just to incorporate, do not over mix.

Pour batter into your greased or lined pan.

Bake in oven 1 hour for bread, 25-30 minutes for large muffins, 18-30 minutes for small muffins or until a inserted tooth pick comes out clean.

Remove from oven and allow to cool for 10 minutes.

Flip out from pan and allow to cool to serving temperature or cool completely to store, enjoy!
