Insalata Caprese

This classic salad is traditionally made with bright red fresh tomatoes, fresh sliced mozzarella and fresh basil leaves so that the salad has all of the colors of the Italian flag. We had yellow heirloom tomatoes on hand so it is yellow and white and green instead of red and white and green. Still tasted good though!

Ingredients:

1 Fresh mozzarella ball
4 Medium vine ripened tomatoes
24-30 Fresh basil leaves
A little olive oil
A little balsamic vinegar (if desired)
Fresh ground black pepper

Method:

Slice mozzarella in ¼ inch thick slices, do the same with the tomatoes discarding the top and bottom. Layer on plates in alternating concentric circles with basil leaves in between. (See picture) just before serving garnish plate with sprig of fresh basil and a few grinds of black pepper. Send to the table with olive oil and balsamic vinegar for drizzling.
