Roasted Asparagus with Feta

Asparagus is one highly overlooked vegetable. Many say they do not like it, but if your willing to try it-it is actually one of the best tasting vegetables. If course any vegetable prepared wrong or boiled too much will not taste right. The trick with asparagus is to keep some of the firmness, just enough do you have a little bite. And sauté or roasting your asparagus is much better than boiling or steaming, here is a great roasted dish to try!

Full time: 30 minutes
Serves 2-4

You will need:

1 bunch or bundle asparagus (2lbs.)
1/2 cup or 4 ozs. crumbled Feta
1/4 cup olive oil
1 tsp garlic powder
1 tsp dried oregano
1 tsp kosher salt
1/4 tsp red pepper flakes

Let us begin:

Preheat oven to 400 and line a baking tray with aluminum foil.

In a small pot combine oil, garlic, oregano, and red pepper. Bring to low boil over medium heat.

Once a slow boil begins, remove from heat.

Making sure ends are off the asparagus. Place asparagus in large bowl, pour in your flavored oil and toss.

Ensure asparagus is full coated. Move to a single layer on your lined tray.

Sprinkle over salt, using more if desired.

Sprinkle over crumbled feta.

Roast in oven for 10-12 minutes, or until feta behind to golden.

Remove from oven and serve immediately, enjoy!
