To be completly honest, any pie can become a Crumb pie. You really only have to substitute crumb topping for the top crust or latice weave crust. I actually prefer crumb topped pie, there is just something so satisfiying about them to me. The nest time your baking your favorite pie, try turning it into a crumb pie and I am sure you'll love it! Here is my favorite crumb pie to get you started.
Makes 9" pie
Full time: 1 1/2 hours (does not include cooling time)
You will need:
1 9" pie crust (homemade or store bought)
Apple Filling:
6 medium apples, I use Gala. Cored, sliced, and chucks. Peeled if desired.
1/2 cup brown sugar
2 tbsp lemon juice
2 tbsp flour
2 tsp cinnamon
1 tsp vanilla
1/2 tsp allspice
Crumb Topping:
1 1/4 cup flour
1/2 cup brown sugar
1/2 cup butter, melted
2 tsp cinnamon
1/4 tsp allspice
1/4 tsp salt
Let us begin:
In a large bowl toss your apple chunks with lemon juice to completely coat them.
Mix in remaing filling ingredients and stir to completely coat apples.
Set aside.
In a small bowl combine all dry topping ingredients and mix until spices are well blended throughout.
Add in melted butter, at first it will feel as if there isn't enough butter. But a soft dough will slowly form after a few minutes.
Set aside.
Line your pie pan with your pie crust and set aside.
Start your oven preheating to 425.
Now set a kitchen timer for 15 minutes and walk away. Seriously, walk away letting everything just sit there.
Once your timer goes off, come back and we can now assemble the pie.
Start with your apples, you'll notice liquid at the bottom of the bowl. This is the excess water that came out of the apples. You don't want that water in your pie.
Carefully move apple chunks into the pie crust leaving behind the excess liquid.
Now crumble the topping evenly across the top of the apples. It is a soft dough, so just work in between your fingures to get it to crumble.
Place pie plate onto a baking tray and into oven.
Bake for 20 minutes.
Lower heat to 375 and bake for 25-30 minutes until a nice golden color has formed evenly.
Allow to cool for at least 30 mintues before serving. Enjoy!
