Pork chops are really a versatile protein. They can easily go sweet with sauces, transform into BBQ with a little slow cooking, and become savory when stewed. I equally enjoy all three and stewing pork chops is probably one of my "go to" meals when I'm not sure what I want to make.
With three simple ingredients and some seasoning, this will easily turn a "not sure what to make" dinner into a winner!
Serves 4-6
Full time: 1 1/2 hours
You will need:
1 14oz can diced tomatoes (or 2 cups diced fresh tomatoes and 1/4 cup water)
6 boneless pork-chops, 1/2" thick
1 medium onion, sliced into rounds
3 tbsp dried basil
1 tbsp salt
1 tbsp ground black pepper
Let us begin:
Preheat oven to 350
In a lightly greased or sprayed baking dish, place onions in a layer across the bottom.
Dust onions with 1/2 tbsp salt, 1/2 tbsp pepper, and 1 tbsp dried basil.
Place pork chops in single layer across onions. Dust with remaining salt, pepper, and basil.
Top with tomatoes and can juice (or tomatoes and water).
Bake 1 hour to 1 hour 20 minutes until done.
Serve immediately with fresh vegetable mix or rice and enjoy!
