Chicken Madeira is the Cheesecake Factory's most popular dish. This rich and moist chicken dish features chicken which is braised in Madeira wine and topped with melted cheese. It is a great weeknight dinner dish and is sure to be a crowd pleaser if having company.
Serves 2-4
Full time: 45 minutes (depending of thickness of chicken)
You will need:
2 lbs boneless skinless chicken breasts or thighs
1/2 pound sliced mushrooms
1 cup shredded Swiss or mozzarella
1/3 cup Madeira Wine
1/2 cup heavy cream
2 tbsp butter
1 tbsp lemon juice
1 tsp salt
1 tsp ground black pepper
Let us begin:
In a medium bowl combine mushroom with lemon juice and set them aside to marinade.
Heat a high sided sauté pan to medium high and add butter allowing the butter to melt for 30 seconds.
Brown off chicken in pan for approximately 5-8 minutes per side.
Sprinkle over the salt, pepper, and add in the wine.
Allow mixture to come to a rolling boil, then cover and lower heat to low and cook until chicken is 180.
Remove chicken from pan and let rest on a plate.
Return heat to high and add in mushrooms mixture.
Sauté for 5-8 minutes or until mushroom are browned off and lemon acid has cooked off.
Add in heavy cream and whisk quickly.
Return chicken to pan, rolling it around to completely coat with sauce and cook until sauce slightly thickens and chicken returns to temp.
Top with cheese and let melt in pan.
Remove to serving plate and enjoy!
