Quick Chicken Parmesan



This is almost like cheating, ok I lie it's exactly like cheating. However, the result is just amazing. It also makes a fine weekday supper because of the ease in preparation. 

In this case it served as the third course of the following Italian menu:

Chicken Parmesan
Roasted Cauliflower and Broccoli
Pear, Goat Cheese and Walnut salad
Fresh Fruit Tarts


Chicken Parmesan

2 Cups of tomato based pasta sauce
4 Frozen breaded chicken patties or soy chik’n patties
4 Thin slices of mozzarella
½ Cup of fresh grated Parmesan cheese
1 Tablespoon of fresh basil chopped 

How you do this thing? I tell you now:

Cook breaded chicken patties in a hot dry non stick skillet about 2-3 minutes a side till just browned. Spoon tomato pasta sauce in the bottom of a large casserole, top with chicken patties, add more sauce and sprinkle generously with a mixture of Parmesan and mozzarella, add fresh or dried basil. Bake at 450 for 15 minutes till Bubbly.
