Green Beans with Tomatoes and Onions


During our little Greek fest I wanted to use up some green beans from the farmers market so I made green beans with garlic, tomatoes and sautéed onions. These veggies must have been designed to be together.

Ingredients:

1 Small onion sliced thin
2 Cloves of garlic
2 Tablespoons of olive oil
1 Ripe tomato chopped
1 Pound package of whole petite frozen green beans thawed
½ Teaspoon of thyme
1 Chopped green onion
Salt and freshly cracked black pepper

Method:

Sauté the onion and garlic for about 5 minutes or until the onion is just beginning to brown. Add the tomato and the green beans and cook until all the liquid has evaporated, the beans should still be crunchy. Quickly add the thyme and green onion remove from the heat season with salt and fresh cracked black pepper.
Serves four to six
