A Greek salad seemed appropriate to a Greek dinner.
Ingredients:
2 Romaine lettuces
2 Tomatoes sliced
¼ Cup of Kalamata’s olives
¼ Cup of feta cheese
1 Large cucumber deseeded and sliced ¼ inch thick
Method:
Do you really need me to tell you how to make a salad? Probably not, but for those who would like one anyway here goes: Toss together the lettuce, tomatoes and cucumber, top with the feta and the olives. Pour over the Greek Salad Dressing and toss lightly. Serve immediately or the lettuce will get all wilted from the dressing and liquid in the tomatoes. Wilted lettuce is nasty.
This dressing is great on a green salad, sliced tomatoes, cucumbers or any other veggie combo.
Ingredients:
2-3 Tablespoons lemon juice depending on how tart you like it
1/3 Cup olive oil
Pinch of sugar
¼ Teaspoon of Oregano
¼ Teaspoon of celery seed
¼ Teaspoon salt
¼ Teaspoon of cracked black pepper
Method:
Mix all in a tightly sealed jar and shake extremely violently just before pouring over salad. This keeps for a couple of days in the refrigerator before it starts to smell like feet.
