Full of soft melted cheese and covered in sweet honey, these dinner rolls are a great for adding a little something extra to a weeknight meal. If desired you can use a variety of cheeses to add different flavors and textures to your meal.

Makes 12 rolls
The needs-
3-4 oz brie sliced thin
2 1/4 - 2 3/4 cup biscuit mix
2/3 cup cold whole milk
2 tbsp olive oil
1 tbsp sugar
2 tsp fresh thyme leaves
1/4 tsp white pepper
For serving-
1/4 cup honey
The know-
Preheat oven to 375'.
Mix together 2 1/4 biscuit mix, milk, and sugar. Mixing to form a a dough which can easily be handled. Add in small amounts of additional biscuit mix until no longer sticky.
Spread additional biscuit mix on flat surface and knead 8-10 times until even in texture.
Roll dough out into a large rectangle roughly 15 x 9.
Brush dough lightly with olive oil and sprinkle across white pepper.
Place brie slices in a single line roughly 1/2" up from the longest edge on the bottom. Place a second line of brie across the doughs longest edge roughly 1/2" from the last row and continue to the top.
Dust with thyme leaves, trying to keep them evenly spread out.
Roll dough tightly across the longest edge and across to end ensuring the second line of brie is tucked in.
Pinch across the end to ensure dough is tightly.
Slice evenly into 12 pieces. (occasionally a few more)
Spray a large cast iron pan or round baking pan with cooking spray.
Place biscuits in the pan slightly apart from each other.
Bake in oven for 25 minutes or until golden in color.
Remove from oven and let cool in pan for 5 minutes.
Drizzle over honey and serve right in pan.
