Toaster Oven Egg in a Basket


Love eggs in a basket? I do, the perfect blend of eggs, cheese, and bread make for a wonderful morning meal. I enjoy this whenever I can and I save time by making it in the toaster oven!

Full time 25 minutes
Makes 1 (but easily multiples, I do four at a time usually)

The needs-

1 dinner or soft roll
1 egg
2 tbsp shredded cheese
1 tbsp diced Canadian bacon
1 tbsp diced green bell pepper
1 tbsp diced tomato
1 tsp butter, melted
1/2 tsp ground black pepper
1/2 tsp salt

The know-

Preheat toaster oven to 350'.

Cut off the top of the roll, roughly 1/4" down. Scoop out the center of the roll, being careful not to tear the outside. I try to leave a bit around edges.

Fold a small piece of aluminum foil around bottom of roll.

Brush inside with melted butter, season with half the salt and pepper.

In a small bowl combine cheese, Canadian bacon, pepper, and tomato.

Pour into roll.

Carefully crack egg open and carefully to avoid breaking yolk, place on top of vegetable mixture.

Season with remaining salt and pepper.

Bake in toaster 15-20 minutes.

Carefully remove and serve immediately.
