Easy, highly flavorful, quick dinners are my favorite, especially on weeknights. Here is a simple highly flavorful marinade to quickly get dinner to sing. This can easily be served over rice or with tortillas and fixings.
Full time 30 minutes
Serves 4
You will need:
2 large skinless/boneless chicken breasts, cut into 1" pieces
1 small onion, sliced
7 oz. chipotle peppers in Adobo sauce, chopped fine
1/4 cup olive oil
1 tbsp butter
1 tbsp minced garlic
1 tbsp dried oregano
2 tsp cumin
2 tsp salt
1 tsp ground black pepper
Let us begin:
In a large zip top bag mix olive oil, garlic, oregano, cumin, salt, and pepper.
Add in chicken and close bag.
Squish bag around to fully coat chicken.
Heat a sauté pan over medium high heat, add in butter to allow it to melt.
Once butter is melted, add onions to pan and cook 5-8 minutes until nice and soft.
Remove chicken from bag using tongs, discard extra marinade. Add chicken to pan.
Cook for 10-15 minutes, rotating chicken often to fully and evenly cook.
Remove to serving platter and enjoy!
