Mediterranean dishes can encompass a wide variety of cooking. With such a wide selection of cultures and countries touching the Mediterranean Sea, the dishes are endless. One of the best weeknight dishes is a flatbread, bursting with bold flavors and tangy textures. The great thing about these flavors is you can impart them boldly in a short amount of time.
Full time 20-30 minutes
Serves 4
You will need:
4 Naan flatbreads, roughly 6" by 8-9" pieces
1 lemon, quartered
1 lb. ground beef or lamb (or mixture of two is ideal)
1 shallot, fine diced
3/4 cup diced grape tomatoes
1/4 cup fresh mint, chopped fine
2 tbsp tomato paste
1 tbsp minced garlic
1 tsp salt, divided
1 tsp ground black pepper, divided
Let us begin:
Preheat oven to 400.
In a large bowl mix together 1/2 tsp salt, 1/2 tsp ground black pepper, minced garlic, tomato paste, shallot, and mint
Add in ground meat and mix to fully blend, try not to over work meat.
On a baking tray, lay out Naan pieces.
Divide mixture in four and spread onto each Naan piece.
Bake in oven 10 minutes for a nice medium rare, or longer if you prefer.
Remove from oven and let rest a few minutes before serving.
Top each slice with a lemon wedge, or squeeze one wedge onto each slice right before serving. Enjoy!
