Minted Honey Roasted Chicken

It is that time if the week again, dinner and what's for dinner? Chicken, again! If your looking for a great spin on a roasted chicken which creates a nice deep herbal flavor with a hint of sweetness, look no further and try this one out!

Full time 1 1/2-2 hours (approximate based on size of chicken)
Serves 4-6

You will need:

4-6 lb. whole roaster chicken
1/2 cup honey
1/2 cup fresh chopped mint
1/4 cup butter
3 tbsp lemon juice
2 tsp salt
2 tsp ground black pepper
1 tsp garlic powder
1 tsp onion powder

Let us begin:

Preheat oven to 350.

Remove skin from chicken and place in a roasting dish.

Sprinkle chicken with salt and pepper.

Roast in oven for 1 hour.

After an hour prepare glaze by placing all remaining ingredients, except mint in a microwaveable bowl.

Microwave for 30-40 seconds or until butter is melted.

Stir in fresh mint and allow to wilt.
 

Carefully remove chicken from oven and spread glaze over chicken.

Return to oven and let cook additional 25-40 minutes or until it has reached 175 degrees minimum.

Remove chicken from oven and carve, serve immediately and enjoy!
